Fabrice Dodane ist ein Meister seines Handwerks und schafft es immer wieder zu Überraschen. Bei seinen Weißweinen schafft er es Druck, Mineralik und Tiefe genial zu vereinen, bei den Rotweinen geht es ihm hingegen um Filigranität, Eleganz und Leichtigkeit. Dafür ist sein Trousseau das beste Beispiel! Mit nur 10,8 % Vol. Alkohol ein echtes Fliegengewicht und diese Leichtigkeit kommt am Anfang dann auch erstmal extrem zart und fast ein bisschen Dünn daher, mit Luft entwickelt sich der Trousseau aber stetig weiter, das Tannin bleibt äußerst filigran, aber eine helle Würze und zarte Beerenfrucht gibt ihm immer mehr Länge, Minze und Kirsche, Mandel und Zitronenzeste. Der zarteste Trousseau den wir je im Glas hatte, bleibt federleicht auf der Zunge hängen und macht einfach Spaß.
