“Allowing wine to develop” as a conscious contrast to the usual “making wine” is the motto at Johannes Hirsch's winery. Located directly at the foot of the famous Heiligenstein, Lamm, and Gaisberg vineyards in Kammern in the Kamptal region, which also produce the most important wines. The Hirsch family, whose roots date back to a 16th-century tithe farm, perfectly blends tradition and innovation. As early as 2002, Johannes Hirsch was a courageous and consistent pioneer in the use of screw caps. However, he remains conservative in his winemaking and relies on methods that have been used to produce great wines for centuries: hand-picking grapes into small crates, gentle processing by whole-cluster pressing, spontaneous fermentation, long contact with the fine lees, and late bottling..

The winery has been certified organic since 2006, but even before this step was taken, the work in the vineyards was very close to nature. For decades, only compost has been used as fertilizer, and artificial fertilizers have been avoided. High vine density, meticulous foliage work, and gentle pruning are further aspects of careful vineyard management. For several years now, the single-vineyard wines have only been bottled in September of the following year to give the wines more time to develop. The result is wines that reflect terroir, elegance, and finesse!

The concise range of five Veltliners and three Rieslings is clearly divided into estate wines, local wines, and single-vineyard wines. In 2016, the labels and bottle design were fundamentally revised, which we consider to be very successful. After 13 years, the entry-level wine Hirschvergnügen was also adapted to the new design with a unique artist label.
