NEW to the RANGE: Paul Gayot grew up in Beaune, in the heart of the Burgundy vineyards. He spent his vacations playing on his grandparents' Beaujolais vineyard. The family estate is run by his father Michel Gayot, who, in addition to the vineyards in Beaujolais, has built up his own winery as a négociant. After several years working at his father's winery, Paul struck out on his own with the 2022 vintage and is now starting out as a micro-negociant, while also cultivating his own vineyards. Thanks to his excellent contacts, he was able to secure several top parcels in Burgundy, including in Meursault, Chassagne-Montrachet, and Vosne-Romanée.

Paul Gayot's wines are stylistically somewhat borderline, as they are neither extremely modern nor truly old-school, but rather combine cellar methods from both worlds. For example, the Pinot grapes are completely destemmed and undergo several days of cold maceration (modern), then fermented in steel with overflow and light punching down, but then go exclusively into used wood (old-school). His Pinots thus combine a modern with a rustic, robust style. The Chardonnay is harvested when ripe, but here too, fermentation is carried out in a rather reductive manner in steel tanks. However, the barrels are not new, but mainly second and third use. The result is ripe, spicy, and tightly knit wines with fullness, texture, and intensity, completely unexcited and not too demanding.
