Josef “Pepi” Umathum is one of Austria's best-known winemakers and has made a name for himself far beyond the country's borders as one of the pioneers of the Austrian red wine scene. Much has changed at the winery since its beginnings. The powerful, wood-influenced wines based on international models have given way to wines with finesse and elegance, without losing their juiciness and drinkability. For many years, sustainable working methods in the vineyard based on biodynamic principles have played an important role, and sheep and cows have been reintroduced to the winery and vineyard. As a result of these changes, the wines have developed noticeably over the last few years, becoming more balanced and complex and reflecting their origins more clearly.  In addition to focusing on the classic Austrian red wine varieties Zweigelt, St. Laurent, and Blaufränkisch, he also cultivates several white wines and, for his Königlichen Tafelwein, unusual varieties such as the Hungarian white grape variety Hárslevelü (Lindenblättriger).

The Umathum winery owns some very prestigious vineyards on both shores of Lake Neusiedl. In Seewinkel, the most important vineyards are called Hallebühl and Haideboden, and in Jois Kirschgarten. There, Josef Umathum also recultivated the unique stone terrace complex Stein, which was first mentioned in documents in 1214.
»Living soil and alert plants show us the right way and give us the inspiration we need to know how to treat them and each other.«,says Pepi Umathum about his approach to viticulture. The vineyards are cultivated according to organic guidelines based on Rudolf Steiner's philosophy—however, out of conviction and a love of freedom, the winery is not certified, which is why the wines officially come from conventional cultivation. In general, the vines are viewed from a slightly different perspective here: »Plants have a memory. To preserve genetics, we select our vines from our own ancient stock.«
