Stéphanie Debout and Vincent Bertin fell in love in Anjou while cycling through the region and sipping wine in the best bistros. Unhappy with their life in Paris—despite their successful careers as engineers—they felt the urge to return to the land, “Retour à la terre,” as the French say. South of Angers, they found the perfect patch of land to put their vision of natural winemaking into practice. The basic principle of their winemaking is to bottle 100% of the grape juice without any interventions such as filtration, fining, or the addition of any foreign substances. Their vineyards consist of vines up to 90 years old, trained in the bush style, which they cultivate entirely by hand. The only exception is the two horses used for tilling the soil.

In 2019, they completed construction of their new cellar, perfectly situated in the immediate vicinity of their vineyards. During the harvest, Stéphanie and Vincent adhere to a strict selection process; unlike many winemakers in the region, they do not tolerate any rot in the grapes in order to produce wines that are as clean and straightforward as possible. In the cellar, the white grapes are gently pressed using a basket press, and the juice flows directly into old wooden barrels. The reds are foot-crushed and undergo a relatively short maceration period of 8 to 15 days to enhance their finesse and freshness. Aging takes place in used barriques; the red wines are bottled after just one year, while the Chenin Blancs remain on the lees and are not bottled until after three years.
