Stefan Vetter

The individualist Stefan Vetter is one of the first natural wine producers in Franconia. In 2010, he leased his first vineyards in Castell and made his first wines, marking the birth of his winery—without the backing of a family business. Before that, he spent two years learning the craft from the Burgenland old master John Nittnaus. In 2012, he moved to Gambach, north of Würzburg, with its rustic terraced vineyards on the Main River. The two Franconian grape varieties Müller-Thurgau and Silvaner represent the entry level in the range; in the middle range, they are called Steinterrassen. The quintessence of his wines is ultimately the single-vineyard wines from over 50-year-old Sylvaner vines from Casteller Kirchberg (CK) and Gambacher Kalbenstein (GK).

Stefan Vetter's main focus is, of course, on Sylvaner, which he interprets in a very independent way, far removed from the mainstream. To achieve this, he presses slowly and gently in a small old basket press, the must remains unsulphured and is fermented spontaneously in wooden barrels without further intervention. The wines are bottled unfiltered and receive no or only minimal amounts of sulfur. True to his motto, “In Vino Vita est,” he also applies this approach in the vineyard: hoes and brush cutters instead of herbicides, laborious manual labor instead of rushing through with a tractor, hand harvesting instead of a full harvester. Organic cultivation is mandatory. Those who drink his wine should feel the complexity and excitement that his vines produce on his soil.
