In the steep vineyards, the grapes are harvested by hand, of course, and brought to the cellar in small crates. When it comes to processing the grapes, Daniel takes a different approach than is customary in the region. The white grapes are not processed gently; instead, they remain in the press for a long time and are pressed at very high pressure, allowing Daniel to extract fine tannins that give the wines even more freshness and texture. The red wines always contain a certain proportion of “Rappen” grapes—about one-third this year—and are processed very gently. Here, Daniel aims for the utmost delicacy, which is why the must for the red wines is barely stirred. All wines are fermented spontaneously and aged exclusively in used wooden barrels. After 15 months on the lees, the wines are bottled without fining or filtration, with a small addition of sulfur.
The Sigmund family is a wonderful example of a modern mixed-farm operation: in addition to Daniel’s wines, his brother Matthias produces natural apple juices, and their grandfather makes world-class bacon from their own pigs. The family’s sheep are allowed to help out in the organically farmed vineyards and orchards. Here, sustainable farming in harmony with nature is truly put into practice.
