Holger Koch and his wife Gabriele Engesser grow almost exclusively Burgundy varieties in the southwestern Kaiserstuhl region, on steep, small terraced sites with loess soil on volcanic rock. In the warmest part of Baden, there are many hours of sunshine during the day, but it cools down at night—ideal conditions for the development of complex aromas. From the outset, the winemaking couple also focused on small-berried Pinot Noir seedlings from Burgundy, which, compared to the widespread Baden Pinot Noir varieties, are less sweet and powerful, but offer more finesse and structure. Holger Koch uses this combination to produce light-footed and elegant Burgundy wines that are among the best in Germany.

“Now, as they age, the wines from these vines are getting better and better, and classic Baden clones can no longer keep up,” says Holger Koch. Organic fertilizers are used, cover crops are planted, and herbicides are avoided. Harvesting takes place earlier rather than later to preserve freshness and tension. Grapes, must, and mash are gently processed without pumps, all wines are fermented spontaneously and remain on the lees until bottling.
