Martin Gojer is the mastermind behind the Pranzegg Winery and something of an “enfant terrible” in South Tyrol—of course we had to include him in our selection! His winemaking style differs greatly from that of the region’s other wineries. While many wineries emphasize power, richness, and fruitiness, his wines emerge from the glass as delicate creatures—full of finesse, delicate, and understated. Martin likes to work with skin contact, so virtually all of his wines are fermented at least partially on the grape skins, giving them a subtle tannic structure. Naturally, they are bottled unfined and unfiltered and receive only a minimal amount of sulfur.

On the steep terraces surrounding Bolzano, Martin Gojer cultivates his vineyards using biodynamic methods and produces just 20,000 bottles per year. When processing the grapes in the cellar, he is very creative and follows no set guidelines, relying instead entirely on his intuition. He uses concrete, fiberglass-reinforced plastic, stainless steel, and a wide variety of wooden barrels; fermentation methods range from short maceration to full maceration on the skins, including the stems. But all his wines have one thing in common: they are given plenty of time in the cellar to develop. The result is profound wines that are unique in South Tyrol and are particularly well-suited as food pairings.
