After graduating, Fabrice managed the local cooperative in Pupillin, where he met Philipp Bornard, one of his closest friends, who was still delivering his grapes there at the time. As early as 1989, Fabrice joined the Domaine de Saint Pierre as manager and gradually implemented his ideas regarding viticulture and winemaking. This included the transition to organic farming and, in the cellar, spontaneous fermentation, extended aging on the lees, and the elimination of sulfur. His friends Philipp Bornard and Jean-François Ganevat were already sought-after winemakers with their own estates when, in 2011, the opportunity arose for Fabrice to take over the domaine from its previous owners. A stroke of luck for all wine lovers!
The vineyards of Saint Pierre are largely planted on barren limestone, a rarity in the Arbois region and one of the reasons for the wines’ lean and sinewy character. This applies to all bottles featuring the somewhat kitschy saint label; here, the grapes come from the domaine’s own vineyards and exhibit the characteristics and class described above. The erratic weather of recent years has taken a heavy toll on the nerves and wallets of winemakers in the Jura, which is why Fabrice has also recently established a négociant line. For this line, he buys grapes from farmer friends and processes them in his cellar into light, juicy, and easy-drinking wines. That’s why the drinking cat on the label fits quite well with the wines’ motto (and probably also with Fabrice’s drinking habits).
