Kevin Bouillet

The Jura region has a shortage of young talent and relies primarily on winemakers who have moved there to take over vineyards and keep the region's tradition alive. So it's all the more wonderful that Kevin Bouillot, a winemaker from Pupillin, has founded a new winery. It all began with the 2018 vintage, starting with 1.2 hectares of vineyards planted by his grandfather between 1930 and 1960. His domaine has now grown to 3.4 hectares and he focuses on the five typical varieties of the Jura: Chardonnay, Ploussard, Trousseau, Savagnin, and Pinot Noir. Kevin produces calm and delicate wines with plenty of juiciness and impressive clarity. The whites also show grip and minerality, while the reds are fruity and extremely enjoyable to drink./div>

Since his first year, Kevin has converted all plots to organic cultivation, and the old vineyards are being replanted with vines, as they have enough strength. In the younger vineyards, the soil is tilled and broken up several times a year. He intervenes as little as possible in the cellar, fermentation is spontaneous and the wines are bottled without filtration, fining or sulphur. This is entirely in line with the examples set by his immediate neighbors, as the legendary winemakers Pierre Overnoy and Philipp Bornard live just around the corner. As is traditional in the Jura, the white wines are aged in small used wooden barrels to promote depth and structure, while the red wines are aged in neutral stainless steel or GRP tanks to emphasize freshness and lightness.
