The likeable Pannobile winemaker from Gols has been one of Austria's established red wine producers since at least 1996, when he was named Winemaker of the Year in Falstaff magazine. Paul Achs does not make show wines, but focuses on elegance and finesse. In his view, rigorous yield reduction is a prerequisite for the highest quality standards. In Gols, where Zweigelt is otherwise predominant, he was one of the first to recognize the potential of Blaufränkisch, and he now cultivates over 10 hectares of this variety. It is therefore no surprise that he repeatedly finds himself on the winners' podium at Falstaff or Vinaria with Blaufränkisch from his top vineyards Ungerberg, Altenberg, and Spiegel.

Paul Achs acts in accordance with his convictions: »As a winemaker, I simply reproduce what has grown in the vineyard—I don't invent anything! That's why turning to biodynamics is a logical consequence.« His wines are gentle, do not jump out of the glass, but want to be recognized and conquered. You have to be patient to enjoy the top wines, because Paul Achs gives the Blaufränkisch the time it needs—this creates long-distance runners that show what they can do after 10 years. His Pannobile is also dominated by Blaufränkisch. For fans of barrique-aged Chardonnays, he produces one of the few white Pannobiles – made exclusively from this variety and absolutely outstanding!
