Johannes is a true nature lover. Almost 35 years ago, his father decided to switch to organic viticulture, at a time when organic farming was not yet a major issue. And even today—not for marketing purposes, but out of deep conviction—Johannes sees his vineyards around Velm-Götzendorf as a biotope and a circular economy, which he supports with homemade compost and herb cover cropping.

In the cellar, it's back to basics: Johannes has replaced most of his stainless steel barrels with clay amphorae and large wooden barrels, fermentation with natural yeasts, no fining, no filtration, and only minimal amounts of sulfur added before bottling. At the same time, he likes to experiment: intracellular fermentation, aging under flor yeast or in his own solera system. Johannes' creativity and inventiveness know no bounds and are what set his wines apart.

Johannes has been experimenting with his own solera systems for 10 years now – a process that is actually known from Spain and associated with the production of sherry. In his Revolution series, he presses exciting natural wines from different grape varieties, all vinified separately and then combined using the solera process. It's a huge undertaking, but one that Johannes is happy to take on in order to create complex, multi-layered wines with the greatest possible harmony, balance, and consistent quality. His top wine is the crowning glory: Perpetuum Blanc is a single-varietal Sauvignon Blanc, Johannes' favorite grape variety.
