“Fortunately, there isn't a lot to reinvent, just some things to improve or perhaps make more individual,” says Gerhard Pittnauer. Since 2006, Pittnauers has refrained from using pure yeasts, enzymes, and extensive use of barriques. For several years now, wines have increasingly been bottled without any sulfur at all—these wines are called “Dogma.” Decisions regarding vinification are not based on laboratory analyses, but on the winemaker's sensory perception and intuition.
There is much discussion, philosophizing, and writing about wines and their individual character: this requires the right terroir and people who understand it. Gerhard Pittnauer and his wife Brigitte have succeeded in achieving this uniqueness. They remain unwaveringly loyal to their favorite and main variety, St. Laurent, convinced of the potential that this variety offers on the cooler, well-aerated, calcareous gravel soils on the southern edge of the Parndorf plateau. This was confirmed, for example, by the variety's victory in the 2014 Red Wine Guide. Pittnauers Blaufränkisch comes from the loamy southwestern slopes above Gols and Weiden, and the 2012 vintage from the Bühl vineyard was recently awarded 5 stars in Vinaria. In addition to single-varietal wines, the Pittnauers produce two very drinkable red cuvées, pitti and red pitt, and, more recently, a great white natural wine, mash pitt.
