Fuchs & Hase

Fuchs & Hase is a joint project by progressive young winemaking couples Stefanie & Alwin Jurtschitsch and Anna & Martin Arndorfer from Langenlois. They produce sparkling wines using the PET NAT method, an ancient traditional technique that is currently very popular and stands for French petillant (sparkling) and naturel (natural).

With this production method, the must is still fermenting during the first (and only) fermentation and is bottled with residual sugar and sealed with a crown cap, where it finishes fermenting. This is how the natural carbon dioxide in sparkling wine binds in the simplest and most natural way. The various PET NATs from Fuchs & Hase come from very different grape varieties, all of which are spontaneously fermented with natural yeasts, unfiltered, undegorged (which is why they are still sealed with a crown cap) and contain neither sulfur nor dosage. They are natural, pure, exciting, and very drinkable—for true fans of natural wines.
