Salwey

The Salwey Winery in Kaiserstuhl has long been a fixture on the Baden wine scene and is now run by the third generation of the family, the affable Konrad Salwey. The Salweys' vineyards are often of volcanic origin, as is typical for the region around the Kaiserstuhl, with large amounts of ash and tuff in the soil formations, but there are also vineyards characterized by loam or gneiss. The most important grape varieties at the Salwey Winery are Pinot Noir and Pinot Gris, followed at some distance by Pinot Blanc and other varieties such as Riesling and Silvaner. While many colleagues in sunny Baden produce ripe to plump wines, the light wines at the Salwey Winery are characterized by a lively, fruity style, and the top wines by a robust, refined character—a welcome change!

To achieve this, Konrad has adapted his winemaking methods in recent years. He now works increasingly with spontaneous fermentation and maceration, and also with mash fermentation for his top Burgundy wines. The wines always appear harmonious, with lively acidity and a purist, precise structure.
