In 2014, Yves Roy and his wife Christelle purchased 5 hectares of vineyards in Poligny, founding the Novice winery. Having recently retrained as a winemaker, Yves completed his apprenticeship with Valentin Morel (Domaine Les Pieds sur Terre), who is based in the neighborhood. He has chosen to work as naturally and simply as possible, using manual methods, while adhering to the principles of organic farming and biodynamics. The goal is to bring out the terroir of each plot in a natural way. Everything is fermented spontaneously, with no added sulfites, and bottled without filtration.
