At the age of 20, Herbert Zillinger took over responsibility for his parents' winery in tranquil Ebenthal, close to the Slovakian border. Uncompromising quality and sustainable management (the winery has been certified organic since 2014) are a matter of course for Herbert and Carmen. Meticulous work in the vineyard with restricted generative growth produces absolutely healthy, extract-rich, and acid-rich grapes with low pH values. In the cellar, pure yeast cultures, enzymes, and fining agents are not used. The must is oxygenated, which turns it brown, and is spontaneously fermented with plenty of lees. This gives the wine structure, stability, ripe fruit aromas, and a magnificent drinkability. Herbert has made a name for himself with this type of wine, which is far from mainstream. Jancis Robinson appreciates him as much as Jens Priewe does.

Patient and with unbridled ambition, the likeable Herbert Zillinger began his winemaking career, confidently naming his wine series Neuland (New Territory), Horizont (Horizon), Radikal (Radical), and Elementar (Elemental), and gave them appropriately aggressive labels, right up to the “Z” edition (whether this stands for Zoro or Zillinger is left open to interpretation). His mantra is “No compromises – I want to create unique wines,” without kitschy, superficial fruitiness (as is often found in the Weinviertel region). The wines should be light, but also sophisticated and challenging – in other words, they should show character. In general, the wines are no longer filtered and only minimally sulfured, resulting in natural wines in the narrower sense that combine structure and drinkability. Since 2017, he has been a member of the biodynamic group RESPEKT, which includes the Gols winemakers Heinrich, Nittnaus & Preisinger.Hauptstr. 17
