Even six years after its founding, the Christmann & Kauffmann sparkling wine estate remains one of the most sensational projects in the German wine world. The first sparkling wines were sold by the glass exclusively at select restaurants and wine bars in June 2022—and all subsequent releases sold out in no time. But behind the never-ending hype lies substance—and how could it be otherwise when Mathieu Kauffmann, longtime cellar master at the Bollinger Champagne house and celebrated sparkling wine maker at von Buhl, joins forces with top Palatinate winemakers Steffen and Sophie Christmann! On 14 hectares in prime locations in the Mittelhaardt region, they devote themselves exclusively to sparkling wine and tailor every step in the vineyard and cellar toward “producing sparkling wines that stand on equal footing with the best sparkling wines in the world.”

Nothing is left to chance: Vineyard work is 100% biodynamic, and the grapes are harvested in small 8-kilogram boxes. Not a single berry is allowed to be damaged, to prevent oxidation and the release of bitter compounds from the skins and seeds. During whole-cluster pressing in the pneumatic press, the winemakers indulge in the luxury of using only the first, highest-quality press juice—known in Champagne as the “cuvée.” Fermentation occurs spontaneously in large wooden barrels, and after the tirage, the sparkling wines age on their lees in the perfectly temperature-controlled red sandstone cellar. While Champagne is a benchmark for quality, Steffen makes it clear: “We want to make a sparkling wine that could not have been grown anywhere else but in the Palatinate.”
