The vineyards are organically farmed, and in the tiny wine cellar, very little technology is used—but plenty of patience. The grapes are harvested by hand and undergo spontaneous fermentation, with minimal intervention whenever possible, and are then aged for at least one year in large wooden barrels on the lees, without sulfur. As a result, the fruitiness of these wines is somewhat more subdued—especially when compared directly to those from Styria—but their Slovenian counterparts offer more spice, structure, and depth. With the somewhat forgotten Furmint, this small winery boasts one of the region’s most exciting grape varieties; however, its vineyards also feature other varieties typical of Stajerska Slovenija, such as Sauvignon Blanc, Welschriesling, and Traminer. The region is warmer and drier than Styria, which lends the wines more power, smoothness, and charm, while the Opok soil contributes structure and subtle minerality.
