Description
100% Grolleau (12% alc.) von 60-jährigen Reben, die auf einem Plateau mit Schiefer und Quarz stehen. Bei verschiedenen Versuchen hat sich die Ganztrauben-Verarbeitung als am Stimmigsten erwiesen. Es folgte eine 15-tägige Maischung, dabei wird mit den Füßen untergetaucht, bevor er 12 Monate in alten Fässern reift, ohne Filtration und Schwefel abgefüllt, In der Nase Kirsche, Brombeere, Veilchen, leicht tintig, mit einem Hauch Kräuterwürze. Am Gaumen eine seidige und filigrane Textur, mit dennoch nennenswertem Tannin - das sich sehr fein auflöst, leicht ledrig - minimal erdig, elegant, ein schöner Naturwein mit Tiefe und gutem Terroir-Ausdruck im Abgang.
