Der Pinot de Zinc ist eine Cuvée aus Teilen der anderen drei Rotweine der Domaine Dandelion. Da die Rotweine auch ohne Filtration komplett klar sein sollen, wird beim abziehen etwas mehr im Fass zurück gelassen. Der nicht abgezogene Rest von Rosie Red, Haute Côtes Nature und Aube kommt dann zusammen in andere Fässer und diese werden so lange liegen gelassen, bis diese Cuvée ebenfalls klar ist und gefüllt werden kann. Das bringt dem Pinot de Zinc circa ein halbes Jahr zusätzlich auf der Vollhefe, wodurch er etwas kerniger und engmaschiger ist, dunkle Würze, hohe Intensität, kompakter Körper, dazu kommt ein Hauch ätherische Noten und eine feine Säure. Der zupackendste Rotwein im Sortiment von Dandelion, mit einem wohltuend, bäuerlichen Touch. [CB Jg. 2022]
