J'en veux encore! - Ich will mehr! Mit den Namensgebungen seiner Weine, kann man immer wieder erkennen das Jean-Francois Ganevat nicht der leiseste und zurückhaltendste Winzer des Jura ist. In seiner Cuvée aus zugekauften Trauben verarbeitet er Trauben aus verschiedenen Regionen und im 2024er Jahrgang ist die Cuvée aus Gamay und verschiedenen roten Jura-Rebsorten zusammengesetzt. Vergoren wird der Wein Semi-Carbonique und anschließend wurde er für 8 Monate in gebrauchten großen Holzfässern ausgebaut.
