Margaux Rivaux and Lohar Galloo are the two minds behind the new winery La Chaume des Lies, which is making its debut with the 2021 vintage. We were introduced to the wines of Chaume des Lies by Pierre Fenals of Maison en Belles Lies, as they were displayed side by side at a wine fair. It quickly became clear why that was the case: Margaux and Lothar work for Pierre, the gifted career changer and their mentor in biodynamics and sulfur-free winemaking. They produce delicate and refined wines with lively acidity and a pure, clear character.

The two have been working at Maison en Belles Lies since 2018, when, at the end of 2020, the opportunity arose to take over nearly 2 hectares of vineyards, mainly in Auxey, Bouzeron, Saint-Aubin, and Hautes Côtes de Beaune. They seized the opportunity and launched their own winery—while Lothar continued to work with Pierre Fenals—and at the same time found a beautiful little cellar in Baubigny. With six wines, their portfolio remains pleasantly manageable and consists of Aligoté, Chardonnay, Gamay, and Pinot Noir. Their guiding philosophy is similar to that of their mentor: to create juicy, lively, and terroir-driven wines that showcase the vineyards and grapes to the fullest. This means very gentle winemaking and, above all, avoiding the use of new oak barrels. When it comes to grape processing, Margaux and Lothar take an even gentler approach than the Fenals, especially with the red wines. Extraction is kept to a minimum here, resulting in wines that are even more delicate and refined.
