Der Grauburgunder von Knipser stammt aus zwei Lagen mit einer mächtigen Lössauflage auf Kalkstein-Untergrund. Spontan vergoren und reduktiver, die Frucht betonender Ausbau im Edelstahltank. Helles Gelb, in der Nase typischer Sortenduft nach Dörrobst, dazu Melone, Birne, auch etwas Mandeln, zart rauchig. Am Gaumen ein eleganter Schmelz, tiefe Fruchtfülle, dazu eine feinziselierte Säure, ergibt eine tolle Trinkigkeit, feine mineralische Textur im Abgang mit etwas Bratapfel im Nachgeschmack.
