50 Jahre alte Reben, gewachsen auf Ton- und Kalkstein, 30 Tage Schalenkontakt, danach sanft gepresst und vergoren, 7 Monate Reifung in Holzfässern. So viel zu den Fakten. In der Nase ist der Ruben zu Beginn dunkel würzig, etwas Leder, eine Prise vom Smoker. Mit Luft kommt dann die für Cabernet Franc typische grüne Aromatik durch, Tomatenblätter, Tapenade aus grünen Oliven, Minze und dazu eine Hand voll schwarzen Johannisbeeren. Am Gaumen recht rustikal mit kerniger Struktur, zupackendem Tannin und frischer Säure. Die Aromatik bleibt dunkel, dazu ein leicht malzig-hefiger Touch und etwas schwarzer Pfeffer, der perfekte Wein zum Jausnbrettl. [AS 06/2023]
