Description
Traditionelle -spontane- Maischegärung mit 100 % ganzen Trauben, Ausbau über 18 Monate in gebrauchten 300- und 500-Liter-Fässern. Unfiltriert abgefüllt.
Das Aromenspektrum reicht von floralen und Gewürznoten wie Bourbon-Vanille, Tannennadeln, Veilchen, Kaffee, Thymian, Wachholder, Lorbeer, über Jodsalz, rohes und geräuchertes Fleisch, bis zu feinen Fruchtakzenten mit Cassis, roter Johannisbeere, Sauer- und Schwarzkirsche, Zwetschge und Brombeere. Rassig und vielschichtig am Gaumen. Wild, würzig, beerig, animierende saftige Säure, samtige, reife Tannine, dichtgewobene Struktur. Vollmundiger Geschmack mit viel Frische und großer Länge.
