Eine Innovation von Alois Gölles, erstmals im Jahr 1984 vergoren. Der behutsam gepresste Saft aus hocharomatischen Äpfeln altsteirischer Sorten, wird nach der traditionellen Balsamico-Methode eingekocht, der Essig mindestens acht Jahre in kleinen Holzfässern ausgebaut. Harmoniert wunderbar mit Olivenöl und mit Steirischen Kürbiskernöl.
