A lot has happened since Christoph Wachter took over his parents' winery in 2008: the wine-growing region of South Burgenland became Eisenberg DAC, and the talented young Christoph advanced to become one of the top winemakers in Eisenberg. With talent and a great deal of finesse, he produces white and red wines that are characterized more by finesse and complexity than by opulence. The characteristics of the individual vineyards are brought out in a nuanced and authentic way, with moderate use of wood and precise acidity. Christoph Wachter now stands for the modern style of South Burgenland like no other, with wines that are structured yet delicate and complex. The topic of natural wine is also skillfully addressed.

The people of Southern Burgenland are known for their hospitality and renowned for their steadfastness. There is much to discover in this rustic region, both in terms of landscape and cuisine. The landscape is particularly characterized by the many picturesque “Kellerstöckl” (former wine press houses directly at the cellar entrance). The vineyards are cultivated sustainably and organically, and in the cellar, the grapes are treated as gently and naturally as possible. Additives, fining, and, above all, barrique barrels are completely avoided. Instead, large used wooden barrels are used, which do not mask the character of the soil and the structure of the grapes, but rather emphasize them. Blaufränkisch and Welschriesling are the main varieties at Wachter-Wiesler, which is typical for southern Burgenland. In Deutsch-Schützen, the Blaufränkisch vines grow on heavy loam soils, which lend them strength and intensity. On the Eisenberg, green and blue slate soils produce finer, more mineral wines with a delicate structure.
