The vineyards are spread across plots in the Grand Cru sites of Zotzenberg and Wiebelsberg, as well as the barren limestone site of Stein, the clayey sandstone site of Heiligenstein, and the warm limestone and sandstone site of Stierkopf. The traditional diversity of grape varieties in Alsace is also cultivated here, and ten different grape varieties result in a wide variety of wines. The most important grape variety, however, is of course Riesling for the whites, while red wine is made exclusively from Pinot Noir. Since 2008, all of the estate’s vineyards have been cultivated organically, and winemaking in the cellar is kept to a bare minimum. No additives, no corrections, and no fining; interventions during aging are kept to an absolute minimum so as not to disrupt the wine’s character and to allow it to express its qualities to the fullest. We particularly appreciate that Jean Pierre is not a dogmatist and, when necessary, lightly filters his wines before bottling and stabilizes them with a minimal dose of sulfur.
