Michel Gahier’s winery is located in Montigny-lès-Arsures, the first village north of Arbois. Its vineyards, characterized by red, white, and gray clay-marl soils, are considered the best terroir for the Trousseau grape variety. The family has lived here since the 16th century, but it wasn’t until Michel became a winemaker in the 1990s that the wines were bottled and marketed independently. That may not sound like a very long time at first, but back then, he was one of the very few winemakers in the Jura region who sold wines under their own name.
Organic farming, spontaneous fermentation, and the avoidance of filtration and any chemical agents are standard practice in the Jura. In the Gahiers’ vineyards, however, chemical pesticides have never been used—an absolute rarity and a blessing for the vines. All wines are aged in used wooden barrels. For the Trousseau, each plot is vinified separately, as the age of the vines varies considerably across the vineyards—ranging from 25 years at Le Clousot to 80 years at Grand Vergers.
