Dieser Chardonnay stammt von mehr als 35 Jahren alten Rebstöcken aus der Lage Saint-Savin mit einem einzigartigem Kalkboden auch mit grauen und blauen Gestein. Spontan im Edelstahl vergoren mit Hilfe einer Infusion Marc de Savagnin aus 2016, danach für 6 Monate in 600 Liter Fässern ausgebaut, unfiltriert und ohne Schwefelzugabe abgefüllt, leicht oxydativer Stil. In der Nase eine saftige Mischung aus wilder Fruchtigkeit und Mineralität, Kräuteranklänge, dazu eine zart wachsige Phenolik, leicht animalisch, dezente Hefereduktion mit Feuerstein-Noten. Am Gaumen eine kräftige -bis derbe- Textur, sehr lebhafte Säure mit salzigen Adern, mit typischer Würze vom Jura-Terroir, sehr fordernd und anspruchsvoll im Finish. Tolle Länge! [GB 09/2023]
