"Pépin" ist der Spitzname von Kevin und so nennt er auch sein rotes Cuvée aus Poulsard, Trousseau und Pinot Noir das in der Lage La Marcette wächst. Im kühlen 2021er Jahrgang zeigt der Pepin durchaus Kante und wirkt schon in der ersten Nase straff und durchaus kernig. Wie alle Rotweine wird der Pépin im neutralen Gebinde ausgebaut, also in Edelstahl oder im GFK-Tank. Es soll die Frische gefördert werden, in 2021 wäre diese aber sowieso spürbar gewesen. In der Nase etwas Eukalyptus, Limette und Salbei, verhaltene Frucht, eher auf der kräutrig, würzigen Seite, der Trousseau bringt dunkle Noten und eine feine Rauchigkeit. Am Gaumen ebenfalls dunkel und kernig, die Struktur bleibt filigran, mürber Gerbstoff packt zu, etwas Zwetschge und Ribiseln, dazu wieder Rauchigkeit und etwas Tabak, durchaus fordernd aber auch mit viel Charakter.
