Gernot Heinrich nimmt sich die Freyheit! Die mittlerweile rar geworden Sorte Neuburger, wurde "mit Putz und Stingl" gemaischt, spontan mit der eigenen Hefe im Holzfass vergoren, nur minimal geschwefelt, ungefiltert und naturtrüb vom Fass in die Flasche gezogen. In der Nase reduktiv mit nur wenig Primärfrucht, Anklänge von Hefegebäck, frischen Quitten, Birnenschale, etwas Physalis und ein leicht animalischer Touch. Am Gaumen zunächst zurückhaltend leicht (nur 11,5% Alkohol), dann mit einer zart phenolischen Struktur und eleganter Mineralik, untermalt von einer lebendig-saftigen Säure. Tipp: einige Stunden vor dem Genuss öffnen und atmen lassen, nicht zu kalt servieren! [AB 12/2015]
