Weißburgunder Paradiesgarten 2018
Description
Der Weißburgunder aus dem Paradiesgarten wurde in gebrauchten Barriques spontan vergoren und ausgebaut, anschließend nach 9 Monaten hefetrüb gefüllt. In der Nase spürt man gleich den Maischekontakt und die Hefelagerung: Birne, Quitte, Ananas, dazu ein Touch Gartenkräuter und ein leicht vanlliges Toasting. Am Gaumen eine hefige Textur mir feinem Schmelz, durchaus frische Säure, ein wenig Gerbstoff, prägnante -nicht zu reife- Frucht, die Mineralik wird von der noch vorhandenen Gärkohlensäure dezent unterstützt, bleibt gut hängen.
