"Indigene" beziehlt sich hier auf die Art wie mit spontanen wilden Hefen die zweite Gärung eingeleitet wurde, und zwar ohne Reinzuchthefen & Zucker sondern durch Zusatz von süßem Traubenmost des Folgejahres. In der Nase sehr fruchtig nach Birnenschale, angenehm "mostig", Hefezopf, feiner Apfelstrudel und dezente florale Noten. Am Gaumen eine sehr zarte Perlage, runde -fast füllige- Textur mit leichter Fruchtsüsse, die Säure ist aber da und macht ihn frisch, sehr angenehmer Apfelgeschmack im Nachhall. Für Alle die es nicht immer strohtrocken brauchen! [GB 12/2022]
