Ein ursprünglicher Chardonnay von Yves und Christelle ROY aus Poligny mit viel Jura im Glas, könnte an mit einem Savignin Blanc verwechseln. Leicht naturtrüb, einerseits viel phenolischer Grip vom Ausbau auf der Vollhefe - andererseits die Frische merkbar. In der Quitte mit schönen Zitrusnoten, Hefekipferl, Nuancen von Haferflocken, weisser Stein, aber keine Spur vom Holz. Am Gaumen eine extrem knackige Textur mit einer vibrierenden Säure, dazu eine kräftige Mineralität mit wirklichem Salzeintrag, zitrische Würze, Limetten und Grapefruit, schnörkellos gerade, die Säure bleibt straff, hält ihn frisch und beschäftigt lang die Zunge.
