GermanVon 60 Jahre alten Rebstöcken in der Lage Aux Fornaux stammen die Trauben für diesen Pinot Noir. Aus dem Lesegut werden die schönsten und intaktesten Traubenbüschel ausgewählt und diese dann auch im Ganzen belassen, um mit den restlichen zehn Prozent an handselektierten und zuvor entrappten Trauben gemeinsam vergoren zu werden. Nach zwei Wochen wird der Deckel gelüftet und die Maische abgepresst, bevor der Wein im verschiedensten Holzfässern über ein volles Jahr auf der Feinhefe zur Reife kommen darf.
Matthew Hayes beschreibt den durchaus alterungsfähigen Wein für Jancis Robinson als: »super-aromatic; abundant flowers and very lifted. There is a refined texture to the fruit – it is fresh and light, but with undeniable depth and a singing quality to it – as if really infused, not steeped. The wine is not tannic, but the very finely woven tannins present themselves in the flesh on the back of the teeth.«
