»Pet Nat« ist die Kurzform für petillant naturel, was direkt übersetzt prickelnd natürlich heißt. Das ist eine fast in Vergessenheit geratene Urform der Sektherstellung. Die Trauben werden eingemaischt und spontan vergoren, mitten in der der Gärung wird der Most abgepresst und mit Restsüsse in Flaschen gefüllt, damit die Gärung in der Flasche weitergeht und Kohlensäure eingebunden wird. Die verbliebene Gärhefe wird nicht entfernt (degorgiert), das Ergebnis sind vielschichtige Perl-Weine mit viel Frucht und feinem Hefeton. Pet Nat Volume 2 aus Grüner Veltliner und Gelber Muskateller), gelb-goldene Farbe, hefetrüb, in der Nase nach Holunderblüten, Zitrusfrüchten und weißen Pfirsich, am Gaumen fruchtig, lebendige Perlage, leichte Brioche-Noten.
