Eine Cuvée aus 60% Chardonnay und 40% Savagnin, über 30 Monate 'sous voile', also unter Florhefe ausgebaut. In der Nase die dadurch typischen Hefenoten, Malz, Pilze, Waldboden, Asche, aber Frucharomen wie Quitte, Ananas und Zitrone, begleitet von zarten ätherischen Noten. Am Gaumen eine wachsige Textur mit prächtiger Säure, die mächtig Druck erzeugt, wieder ist die Florhefe gut schmeckbar, dazu leichte Getreideanklänge, was einen komplexen Gesamteindruck ergibt. Großartiger JURA-Stil, passt wunderbar zur Speck, Salami und Comté! [GB 05/2024]
