»Pet Nat« ist die Kurzform für petillant naturel, was direkt übersetzt prickelnd natürlich heißt. Das ist die fast in Vergessenheit geratene Urform der Sektherstellung. Die Trauben werden eingemaischt und spontan vergoren, noch in der Gärung wird der Most mit ca. 25 g Restzucker in Flaschen gefüllt, dann geht die Gärung in der Flasche weiter und die Kohlensäure wird gebunden. Die verbliebene Gärhefe samt Weinstein wird teilweise entfernt (degorgiert), das Ergebnis sind Perlweine mit viel Frucht & Struktur und feinem Hefeton. Pet Nat Volume 1 von Alwin Jurtschitsch & Martin Arndorfer besteht aus Müller-Thurgau, Grüner Veltliner und Gelber Muskateller, im Glas gedecktes gelb, naturtrüb wie Apfelsaft, intensive Nase nach Apfel, Grapefruit, Rhabarber und Flieder, am Gaumen mit einer kernigen Textur, verhalten feine Perlage, eher wenig Säure, dabei zart hefig mit Apfelstrudel im Abgang.
