Andi Weigand aus Iphofen lässt natürlich nichts aus und auch ein Pet Nat kürt sein Portfolio. Naturpur - unfiltriert, undegogiert und unberührt. In der Nase kommt die Hefe deutlich raus, gepaart mit Quitte, Williamsbirnenkompott etwas Holunder gibt den floralen Kick. Man merkt dass die ein oder andere fränkische Aromarebsorte mit drin in der Cuvée ist. Zarter Schmelz legt sich am Gaumen nieder, auch hier ist der Hefetouch spührbar. Feine Perlage, dezente Frucht, weiche Textur. Da der Pet Nat 2020 nicht von Heferückstände und Weinstein befreit wurde, sammeln sich am Flaschenboden die natürlichen Rückstände. Ein Tipp: ca. 2 Stunden vor dem Öffnen die Flasche kurz auf den Kopf stellen, sodass sich die Hefe wieder etwas aufgelockert wird. Vorsichtig Öffnen. [NH 08/2021]
