Juhfark ist eine autochthone ungarische Rebsorte, die auch uns bislang unbekannt war, bis wir Sie auf der Preisliste bzw. im Keller von Bott Frigyes entdeckten. Die weiße Rebsorte kommt ursprünglich aus Ungarn, ist dort unter vielen Synonymen bekannt (Jufarco, Juhfaku, Fehér Kadarka etc.), aber nur noch in Somló auf knapp 200 Hektar verbreitet, Der Name Juhfark (auf deutsch: Lämmerschwanz) leitet sich von der länglichen, zylindrischen Form der Reben ab, die sich an ihrem Ende krümmen.

In der Nase zu Beginn grün, wachsig, kräutrig und vegetabil, Brennnessel, Kamille und Tee, mit viel Luft kommt etwas gelbe Frucht hinzu, weißer Pfirsich, Mirabelle und Steinmehl. Am Gaumen mit frischer Säure und zartem Gerbstoff, mineralisch und karg, wieder helles Steinobst, Bienenwachs und leicht salzigem Abgang. [ND 07/2022]
