Die Lagen um die Ortschaft Chiroubles sind das höchstgelegene Cru im Beaujolais und erbringt in der Regel finessenreiche und elegante Beaujolais, für manche die typischsten der gesamten Region. Auch bei Karim Vionnet ist der Chiroubles zu Beginn der leiseste Wein aus eine Cru Lage, er startet mit feiner Frucht nach reifer Erdbeere und kühler Minze, mit Luft macht er aber schnell auf, es kommen deftigere Noten dazu, etwas Tabak, dunkle Würze und karge Rauchigkeit. Am Gaumen zeigt er sich saftig, dazu kommt aber auch gleich mächtig Zug, das Tannin ist dabei sehr feingliedrig und mürbe, mit der Säure schmeckt es nach Kirsch, dann kommt mehr Fülle, Zwetschgenröster und wieder diese feine Rauchigkeit, komplex und etwas fordernder als etwa der charmante Chenas.
