Description
Ganze Trauben für zwei Wochen auf der Schale vergoren, in der Endgärung abgepresst und dann 15 Monate auf der Voll-Hefe ausgebaut, ohne Filtration und Schwefel-Zugabe abgefüllt. Sattes Goldgelb, in der Nase anfänglich reduktive Aromen: frische Quitte, Fenchel, Weißkraut, Pommeranze, zart rauchig. Am Gaumen eine deftige Textur, dezent herb-mostig, gute Säure nach reifer Zitrone, wieder Quitte, dazu ein herzhafter Gerbstoff, zart bizelige Mineralik, etwas Roibuschtee im späten Nachhall.
