Die biologischen Aligoté-Trauben wurden aus Santenay und den Macconais zugekauft. Natürlich und spontan vergoren, teilweise im Stahltank und Amphoren ausgebaut, ohne Schönung, Filtration und Schwefelzugabe abgefüllt. In der Nase gelbe Frucht mit Anklängen Melone, Weißbrotrinde, eine minimale Reduktion (Sesam, Popcorn) und eingeweichte Haferflocken. Am Gaumen beginnt er mit einer sanften Textur und zierlicher Säure, die sich mit Luft etwas entwickelt, etwas Limonenzeste und einer Spur Salz kommt auf, alles sehr fein und elegant verwoben, äußerst angenehm im Nachhall und sehr trinkanimierend.
